Peach Cobbler is a family favorite in our house. I usually make quick cobbler with three ingredients: canned peaches, yellow cake mix, and butter. Lots and lots of butter. Last night I was craving some of that delicious cobbler, but I didn’t want to throw off my current nutrition. I have been doing great eating very few processed foods and I had already eaten a couple whole wheat tortillas yesterday. I needed to come up with something because I WAS going to have me some cobbler. That’s when I have my best ideas, in a desperate time of need. And I was desperate for that peach cobbler. I grabbed base ingredients that I used for previously posted recipes, it’s my go to for flour based recipes. I used my favorite single serve pan, a few delicious healthier ingredients and out came a wonderful peach cobbler. I really couldn’t believe how great this thing tasted. I actually might take a break from writing this to throw one in the oven. Prep took less than 5 minutes. Almost as easy as my favorite 3 ingredient quick peach cobbler, but way healthier. Cook time was about 20 minutes, this was the first time I made it so I continued to check on it throughout. The only problem I encountered was when I removed the springform cake pan it lost some of its rise. I will be making this a lot more so I am sure I will come up with a solution. Hardware you will need:
3 inch springform pan
Mixing Bowl
Masher and/or whisk

Two Eggs
Vanilla Protein Powder – ¼cup
Vanilla Extract – 1 Tblsp.
Rolled Oats – ¼cup
Cinnamon – about ½ Tblsp.
Sliced Peaches – ½ can

Preheat oven at 400º

Mash Banana then whisk in everything but the peaches.
Pour peaches into cake pan.
Pour mixture over peaches.
20 minutes in oven.

Top with Vanilla Greek Yogurt, Honey, and Chia Seeds.
Dive in.
