Healthy Dessert Tacos
Healthy Dessert Tacos! Yes Tacos. And Dessert. Plus Healthy. Now I’m not one to call everything folded up a Taco, but I don’t know what else to call these things. It’s obviously not a Gyro. These protein packed beauties are a great end to any meal, while staying healthy. Dessert Tacos can also be made faster than the wife can turn dessert into a cheat meal of Cinnamon Rolls.
The base of the recipe is the same as the Protein Banana Pancakes, Eggs and Bananas. Bananas are 19c a pound on Thursdays in our area, and Eggs can be found every few weeks for 49c a dozen. Though we have chickens, 49c is super cheap! I use this base recipe a LOT, that and Chia Seeds. It is a versatile recipe that can work in so many different ways, the best thing to do is experiment with it and find different great flavors. Eating the same healthy foods day after day is the easiest way to give up on a healthy diet. Changing the flavors in healthy recipes can keep meals from becoming bland and boring. We have plenty more healthy food recipes using this base on the way.
1 Medium Banana
2 Large Eggs
1 Tblsp. Vanilla Protein Powder
1 Tblsp. Honey
A dash of Vanilla Extract
A sprinkle of Cinnamon
Disclaimer: I don’t know the measurement of a “dash” or a “sprinkle”, these two words sounded better than “A bit of…”
Mash the Banana until there are no chunks. Whisk the rest of the ingredients into the Banana adjusting the Protein Powder to desired thickness. Cook in a pan using a cooking ring. Let cool.
Fill the middle with Vanilla Greek Yogurt and top with fruit, or spread peanut butter and top with sliced bananas with drizzled honey. Sprinkle Chia Seeds over the top for the extra nutrients.
This Recipe makes three Healthy Dessert Tacos, depending on the thickness of the outer shell. Simply shove a chopstick through the three, take super cool Instagram photos and serve!
